Epitomizing industrial-chic, Hotel de Goudfazant is no pension, rather a converted warehouse in city-north serving up some of Amsterdam’s most refined eats.
A giant glass-bottle chandelier hangs over the 1,200 square meter space, setting the tone for the creative, polished food to come as the seasonal dishes spin out of the kitchen and onto the tables of the city’s dapper diners. Fried sweetbreads with apple-rhubarb sauce or veal cheeks with green asparagus and tarragon mayonnaise are some of the menu’s stars, but the card changes with each season so expect quality quality produce whatever the time of year. Come summertime and the linen-clad tables are freed up, as patrons move outside to dine waterside.
