This pint-sized bistro has recently relocated from the 9th to center stage in the 1st District, but its location isn’t the appeal behind the restaurant.

The craze came about when American chef Daniel Rose—whose resume seemingly spans far beyond his years—announced he would serve French-inspired four-course prix fixe dinners for the astonishing low price of 39 Euros. Not only does the young chef manage the kitchen, but he is also the restaurant’s reservationist and host.

Rose’s renaissance-man approach to his restaurant includes daily market shopping, which ultimately determines Spring’s menu. Two years later the restaurant continues to be impossible to fetch a table at—according to their blog, Spring is still fully booked months in advance.
