Frenchie, as the name implies, is French at its core. But when it comes to cooking, Chef Gregory Marchand is not overly patriotic. Like many of Paris’ talented chefs, he does not limit himself in his culinary approach and technique. Rather, he does the opposite drawing from his experiences cooking abroad in the U.S. and the U.K.
Having worked at the noteworthy NYC establishment, Gramercy Tavern, and later alongside celebrity chef and food activist, Jamie Oliver, Marchand’s food reflects his experiences and respect for both countries’ cuisines. In-spite of his illustrious past, he manages not to get carried away with his influences and consistently serves forth food that is unassuming, fresh, and refined.
